Job description

As Executive Chef in InterContinental Singapore Robertson Quay's culinary team, you will lead the entire kitchen operation, overseeing our award-winning Italian restaurant and bar, as well as In-Room Dining, Club Lounge, and meeting spaces.

Reporting to the Hotel Manager, you will drive excellence in food quality, team performance, and operational efficiency.

This role combines visionary leadership with hands-on operational oversight.

You will be responsible for shaping menus, managing costs, ensuring compliance with food safety standards, and creating unforgettable guest dining experiences.

People

  • Lead, inspire, and manage the culinary brigade across all hotel outlets, ensuring smooth daily operations and a culture of excellence.

  • Provide clear direction, training, and resources so that every team member can succeed in their roles.

  • Ensure accurate forecasting, costings, and inventory management in line with budget targets.

  • Drive innovative menu development to balance guest preferences, seasonality, and operational effectiveness.

Guest Experience

  • Operationally lead a high-capacity Italian restaurant and bar while overseeing all other culinary touchpoints in the hotel.

  • Ensure food quality, taste, and presentation consistently meet InterContinental standards and delight our guests.

  • Uphold the hotel's reputation by creating memorable dining experiences and authentic culinary offerings.

  • Engage confidently with guests and stakeholders, responding to feedback with professionalism and care.

  • Guarantee compliance with HACCP, food safety regulations, and all brand standards.

  • Maintain a safe, clean, and well-organised working environment across all kitchens.

The Executive Chef is accountable for the overall leadership, quality, and success of the hotel's culinary operations.
